Welcome and thank you for your support as we develop our vision for this fine Wellington establishment.

We would like to introduce you to the cuisine of Perigord, France's greatest gastronomic region. Perigord is the name of an old French region that now encompasses mainly the Dordogne department in the southwest of France.

Its geography and resources make it one of the untouched regions of Europe. The heavily forested land is home to the famous Perigord black truffle, chestnuts, oaks, wild deer and boar, and many different types of mushrooms including the prized cepe, boletus edulis, and the brilliant black trompette de la mort, the death trumpet.

In the cleared land you will find the great Limousin and Charolais beef animals, milking goats for the renowned cabecou cheeses, vineyards that produce the famed Bergerac and Monbazillac wines and, of course, ducks and geese for confit, magret and foie gras.

Good food is linked with the land it comes from. The French call it "cuisine du terroir." It is our great pleasure to bring to you both the best of Perigord and the cuisine of the South-West of France along with the finest local producers. Our suppliers include the organic farms, Ti Kouka and Biofarm, Canterbury Fresh lamb, PrimeAngus grass-reared beef, Waimarino free-range pork, Southern Clams, organic vegetable suppliers and fishing boats that use hooks and lines to bring us the freshest fish.
